the 1st two work but when i try the latter as soon as i release the throttle the bike starts racing back to the former cruising speed (not pleasant when approaching a sharp bend, zebra crossing etc.

I use te clutch to deactivate. A quick "dab" sort of does it. I don't use the brakes as I don't want cars behind to panic so I release the cruise in a "stealth" style
I use the cruise by leaving the switch in "on" all the time - easy to spot on the 12, not so easy with new fangled switch gear and no light.
I engage at my chosen speed (which has to be over what the bike thinks is 30 mph) and sometimes use the cruise throttle to adjust up or down.
I have found the bike running back into cruise speed on a few occasions - but only when I had hit the cruise button by accident when slowing using a closed throttle. Just my observations...
